Ingredients
Barota
4
Tomato (chopped)
2 large
Onion (chopped)
2 large
Carrot(grated)
1
Peas (boiled)
¼ cup (optional)
Turmeric powder
¼ tea spoon (optional)
Green chilli(chopped)
4 or more
Salt
As required
½ table spoon
Coriander leaves
Few
Curry leaves
Few
Oil
3 table spoon

How to prepare vegetable kothu:
  • Tear the barota into small pieces and keep aside.
  • In a pan saute the coriander leaves, curry leaves, onion, green chilli, carrot, peas and tomato in oil.
  • Add the turmeric powder, garam masala powder and salt.
  • Add the parotta add heat for 4-5 minutes.


Tips:
  • You can add tomato salna while saluting. If so reduce the quantity of chilli and salt accordingly.
  • Serve with onion raita
