Mango smoothie/lassi - refreshing and healthy summer drink

Mango smoothie
Mango smoothie


Ingredients:
Ripped Mango’s pulp
1 cup
Thick Yogurt/curd
1 cup
Sugar
1 table spoon
Milk(can be chilled)
¼ cup
Crushed Ice cube/ Vanilla ice cream
¼ cup (optional)

How to prepare mango lassi:
  • Mix the mango pulp along with the curd, sugar, milk and Vanilla ice cream in the blender till it become frothy.
  • You can also add banana and pineapple along with this.
Tips:
  • If you didn’t have both crushed Ice cube and vanilla ice cream blend the remaining and keep it in the refrigerator for sometime and serve it as chilled.
  • If your yogurt is not thick you can drain it in the muslin cloth or similar to that and use it.

Cold coffee/iced coffee - summer refreshing drink

Ingredients:
Cold milk
2 cup
Boiling water
½ cup
Instant coffee powder
3 teaspoon
Sugar
2 table spoon(or more)
Ice cube(crushed)

Fresh milk cream(optional)
2 table spoon

How to make cold coffee:
  • Add the coffee powder with boiling water and dissolve it. Allow this to cool.
  • Now along with milk blend this mixture.
  • Then add the cream, sugar and ice cube and blend till smooth. Serve it chilled.

Ingredients:
Thick curd/yogurt
1 cup
Sugar
2 table spoon
Milk skin
2 table spoon
Cumin powder
¼ tea spoon
Rose water
3 drops
Salt
A pinch

How to make malai lassi:

  • Blend the curd, cumin seed and sugar.
  • Pour it into the glass and add milk skin, rose water and salt.
  • This will increase digestion.

Coconut

Jeeragam/Cumin seed

Jaggery

Boiling water
¼ cup

How to prepare cumin milk:
  • Soak the jeera for 5 minutes.
  • Powder the jaggery and dissolve it in boiling water and filter this.
  • Grate the coconut and grind it along with jeera. Squeeze this as coconut milk and filter this too.
  • Add the coconut milk with jaggery water and keep it in fridge, while serving you can add ice which is optional.
  • This will reduce the body heat and ulcer.

Ingredients
Semiya/Vermicelli
1 cup
Water
1 ½ cups
Green chilli

Onion (chopped)
¼ cup
Sombu/perunjeera/fennel seed
¼ tea spoon
Lavanga pattai/cinnamon
Small piece
Salt
As required
Oil/ghee
2 table spoon
Curry leaves
Few
Cashew nut
Few
Kadala parupu/Bengal gram/channa dal
¼ tea spoon

How to make vermicelli upma:
  • Roast the semiya and cashew nut in ghee separately till light brown and set aside.
  • Now temper the fennel seed, cinnamon, channa dal and curry leaves. Then sauté the onion, green chilli and add the water and salt.
  • Allow boiling and then add the vermicelli and cook it.
  • At last add the cashew nut and remove from flame.
  • Serve with sugar and banana or with chutney.

Watermelon cubes(deseeded)

Chilled milk
1 cup
Sugar
2 table spoon(or more)
Vanilla ice cream(optional)

How to make watermelon milkshake:
  • Cut the watermelon into pieces. Take a large piece out of it.
  • Remove the flesh part of watermelon and deseed it.
  • Add the chilled milk, sugar, watermelon in a blender and blend it.
  • Now add the ice cream and blend it smoothly.

Semiya/Vermicelli/seviyan

How to prepare semiya biriyani:
  • Fry the seviyan and cashewnut in the ghee and transfer it to the plate.
  • Sauté the curry leaves, coriander leaves, onion, carrot, beans, peas and green chilli and add the garam masala powder, pepper powder.
  • Now add the water and salt. Allow to boil and add the vermicelli and cook it.
  • At last add the cashew nut and remove from flame.

Pineapple juice

Chilled milk
2 cups
Vanilla ice cream(optional)
4 serving spoon

How to make pineapple milkshake:
  • Remove the pineapple skin and slice it into bite size pieces.
  • Grind the pieces along with sugar and some water. Strain the juice. (Straining is optional, if you don’t want to strain no need to add water. Directly add the milk.)
  • Now add 1 cup of juice with, milk and ice cream and blend it smoothly.

Nenthiram (Yetham)pazha puttu/Steam Rice Cake with Plantain - Indian Breakfast

Ingredients:
3 cups
Water

Coconut (grated)

How to make Steam Rice Cake:
  • Mix the flour with salt. Sprinkle the water little by little and mix well till it reach the stage when we press the flout between our finger it should get our finger prints.

  • Press the flour like a heap in a plate and cover it. Keep this for 15 minutes and rub the flour in the plate with your hand to remove the lumps.
  • Slice the plantain into small pieces and keep it ready.

  • In the cylindrical top of the puttu maker layer the coconut above that layer the plantain and then layer the flour and so on. Start with coconut and also end with coconut.
  • Boil the water and after that place the cylindrical top, place the lid and cook for 10 minutes. Now its ready to serve.
  • Serve with sugar, papadam/appalam, boiled mung dal, ghee.

Tips:
  • If the steam cake is cooked and get ready you can see the steam coming out through the lid.
  • Instead of coconut you can also use carrot.
  • You can also use idil maker to cook.
