Ingredients:
Cashew nut/kaju
½ cup
Tomato(chopped)
1
Onion(chopped)
1
Ginger(chopped)
1 inch piece
Chilli powder
As required
Turmeric powder
¼ tea spoon
Coriander powder
½ table spoon
Salt
As required
Garam masala powder
½ tea spoon
Cloves
3
Kasoori methi(optional)
¼ table spoon
Bay leaf
1
Coriander leaves (chopped)
few
Ghee
2 table spoon
Butter
2 table spoon
Milk/heavy cream
3 table spoon
Cashew cream
1 table spoon

How to prepare kaju masala:

  • Roast the kaju in 1 table spoon of ghee and set aside.
  • Using the remaining ghee in a pan sauté the onion, ginger, tomato, turmeric powder, coriander powder, chilli powder and garam masala powder.
  • Allow it to cool and grind it to paste.
  • Now it the butter add the bay leaves, cloves, and add the paste fry it for 3-4 minutes. Now add ½ cup of water(or more), milk/heavy cream, cashew nut, salt, cashew cream and allow it to boil.
  • Finally add coriander leaves and kasoori methi.
  • Serve this with chapathi, fried rice etc.
