Kinnathappam/Steamed rice cake/Coconut milk sweet cake-Eid special recipe

Ingredients:
Raw rice/pacharisi
1 cup
Egg
2
Coconut milk
2 cups
Sugar
1 cup
Cardamom
2 (powdered)
Ghee
1 table spoon
Cumin seed
½ tea spoon
Coconut water(optional)
½ cup

How to prepare Steamed rice cake:
  • Soak the rice for 3-4 hours. Grind it by sprinkling some coconut water (or water) into fine paste.
  • Now blend the egg with coconut milk, coconut water, cardamom powder and sugar.
  • Then blend this with grinded paste. If required add some milk or water.
  • Boil the water in a idli kadai to steam cook the cake. Grease a steel plate or cake pan with ghee and add ½ tea spoon of ghee and add the cumin seed in it.
  • Now pour the batter in this plate till half the level. Steam cooks it for 25-30 minutes.
  • Remove it and allow it to cool and cut it in desired shape.
  • Repeat it for remaining batter also.

Tips:
  • You can also cook it in pressure cooker without using weight for ten minutes or more till it gets cooked.
  • Instead of using steel plate you can use idli plate and cook in the shape of idli.
