Poha Upma – Aval Upma




Ingredients:

Poha
1 cup
Onion
1 (grated)
Red chilli
1 (chopped)
Roasted peanuts
2 tbsp
Oil
1 tbsp
Coconut
¼ cup grated
Mustard Seeds
½  tea spoon


How to make Poha upma:
  • Wash the poha and drain the excess water.
  • Saute the onion with oil, red chilli and mustard.
  • Add coconut to it along with peanuts.
  • Add the poha and heat it for 2 minute. Serve with sugar and banana.

Gobi Paratha/Cauliflower paratha (Pan fried indian flat bread)

For making the dough for parathas use



  • whole wheat flour/atta,
  • salt
  • water
  • oil (for frying in tawa)

using this knead the dough to the consstency of chappathi. Use atta based on your requirement.


Ingredients:


For stuffing:


Chopped  gobi/cauliflower
1 cup
Turmeric powder
A pinch
Ginger-garlic paste
1 tsp
Garam masala powder
¼ tsp
Green chilly (chopped)
3
Salt
As required
Cumin seed
1 tsp
Coriander leaves (chopped)
2 tsp
Oil
2 tsp
Onion(chopped)
¼ cup



Steps to clean cauliflower:

  •  In hot water add a pinch of turmeric and a table spoon of salt, now add bite sized cauliflower and set aside for 10 minutes.
  • Now the worms will start to float on the water if any. After that wash the cauliflower with water twice or thrice.  After removing worms drain it and chop well, set aside.



How to make gobi paratha:
  • In a pan add oil to heat and then add cumin seed once it starts spluttering add onion, turmeric powder, ginger-garlic paste, garam masala, coriander leaves, green chilly and salt. Saute well till it become golden brown and then add chopped gobi.
  •  Sauté well for 5-10 minutes and set aside.
  • Divide the dough into equal balls. Also divide the gobi stuffing into equal balls.
  • Surface the atta dough balls to your palm size and keep the stuff inside. Now fold it with dough. Pinch the end of the dough with your fingers to make a rough ball.
  • Now the ball with stuffed gobi is ready. Dust some atta flour in balls and flatten it parathas. It should be somewhat thick.
  • Place it in a hot tawa and wipe some oil on both side and cook it till it become golden brown both side.

For making the dough for parathas use

Carrot(grated)
1 cup
Onion(chopped finely)
1 large
Green chili

Pepper powder
As required
Turmeric powder
¼ tea spoon
Salt
As required
Garam masala powder
½ tea spoon
Oil
2 tea spoon

How to make carrot paratha:
  • Sauté the onion, green chili in oil and add the carrot, sauté well.
  • Now add the salt, pepper powder, garam masala powder, turmeric powder and off the flame after a minute. The stuffing is ready.
  • Divide the dough into equal balls. Also divide the carrot stuffing into equal balls.
  • Surface the atta dough balls to your palm size and keep the stuff inside. Now fold it with dough. Pinch the end of the dough with your fingers to make a rough ball.

Pulungal rice/Praboiled rice
½ cup
Salt
For taste
Water
As required
Ghee

Cumin seed
1 tea spoon

How to prepare nei kolukattai:
  • Soak the rice over night and drain off the water completely and keep for 5 minutes.
  • Grind it coarsely similar to rava.
  • Now add the coconut, salt and sprinkle some water(if required) in it and mix well.
  • Then shape them into small balls. In a kadai heat the water well till the small bubbles comes out.

3 cup

How to make Idiyappam:
  • Boil the water along with salt and oil for 5 minutes. Add little by little boiled water along with flour.
  • Mix this with spoon till it become soft dough.
  • Grease the idiyappa mould with sev plate. Take small portion of dough in the mould.
  • Grease the idli plate and squeeze the dough in circular motion above that.

  • Steam cook the idiyappam and serve with carrot, coconut, milk and sugar.
