Thayir vadai/Dahi vada/Curd vada – South indian style

Ingredients:
Ulunthu vadai

Curd/yogurt
1 ½ cups
Coriander leaves
Few grated
Carrot (grated)
5 table spoon
Green chilli(chopped)

Salt
As required

How to make thayir vadai:
  • Mix the curd with green chilli and salt.
  • Dip the vadais in warm water and transfer immediately in the tray which is optional to reduce oil.
  • If not directly keep them on the tray. Pour the curd over them evenly.
  • Keep it in refrigerator for 2-3 hours.
  • Garnish with carrot and coriander leaves and then serve.

Sarkara pongal/chakara pongal/sweet pongal - Traditional Indian Pongal Recipe

Ingredients:

Raw rice
1 cup
Yellow mung dal/paasi parupu
¼ cup
Jaggery(grated)
1 cup
Water
3 cups
Ghee
4 table spoon
Cashew nut
Few
Raisins
Few
Cardamom/elachi
2
Cloves
2
Dry ginger powder/sukku
¼ tea spoon


This can also a Nivedanam Recipe.

How to prepare sweet pongal:
  • Dry roast the mung dal. Roast the cashew nut and raisins separately, also roast cloves and elachi in ghee and set aside.
  • Dissolve the jaggery in ½ cup of boiling water and filter it. Keep it ready.
  • Wash the rice and mung dal and add water with it and cook it well.
  • Now along with that add the jaggery water, cashew nut, raisins, cloves, cardamom and dry ginger powder and cook for few minutes.

Ven pongal/Ghee pongal - Traditional Indian Pongal Recipe

Ingredients:
Raw rice
1 cup
Yellow mung dal/Paasi parupu
¼ cup(roasted)
Grated coconut
¼ cup
Ginger(chopped)
1 table spoon        
Water
4 cups
Black Pepper powder/Crushed black pepper
As required
Salt
As required
Ghee
2 table spoon
Cashew nuts
Few
Curry leaves
Few
Jeera/cumin seeds
¼ tea spoon
Asafoetida
A pinch

How to prepare ven pongal:
  • Roast the cashewnut in ghee and set aside.
  • Dry roast the mung dal, wash the rice and dal. Fry the ginger and asafeotida for few second in ghee and add the rice, mung dal, salt, pepper  with water.
  • Cook it well and mash it.
  • Now temper the jeera, curry leaves and add this to cooked rice along with cashew nut and coconut. Now remove from the flame.
  • After the add 2 table spoon of milk to increase the taste.
  • Have the with the side dish Ulunthu Vadai.

Sugarcane juice – Home made traditional indian drink(pongal special)

It’s a healthy and refreshing drink which reduces body heat. Its also a summer special drink.
Ingredients:
Sugarcane cube
2 cups
Lemon
1 small
Ginger
1 inch piece
Ice cube(optional)

How to prepare sugarcane juice:
  • Wash the sugarcane and remove the skin with knife and cut it into 1 inch cubes.
  • Wash the ginger and strip its skin too.
  • Now grind the both in the mixer to prepare juice.
  • In a coffee strainer squeeze it to filter the juice. Again filter the squeezed juice because it should be too clear.
  • Now add the lime juice along with this.
  • Serve it as such or chilled. You can also add ice cube while serving.
